Vegetarian Black Bean Burritos

Whether you are a vegetarian or not this is a great inexpensive and easy recipe anyone can make. You could add scrambled eggs to make it a breakfast burrito or meat such chicken or beef as a non vegetarian option. Be creative, have fun and enjoy!

Before we get to cookin' there is one thing I must talk to you about first. All of the ingredients you need for this recipe you can find in our virtual grocery store called We Deliver Cancun. Ok ready to start your shopping list? Here is what you will need to create your delicious burritos -
(This list is for 4 large burritos.)

  • 4 large tortillas
  • 2 tablespoons of vegetable oil
  • 1 small onion chopped (white or red, what ever you prefer)
  • 1/2 red bell pepper chopped
  • teaspoon of minced garlic
  • 1 can of black beans drained and rinsed
  • 1 jalapeño pepper chopped fine
  • 1/2 cup of corn
  • 1/2 cup of rice
  • 5 ounces of cream cheese
  • chopped cilantro - I like A LOT 
Optional toppings - avocado, tomato, shredded cheese, sour cream, salsa

How to create - 
  1. Cook the rice and set aside.
  2. Wrap tortillas in foil and put in the oven for 10 to 15 minutes at 350°.
  3. Over medium heat put the onion, bell pepper, garlic, jalapeño and corn in the skillet, cook for about 2 minutes. Add the beans and rice and cook for another couple minutes.
  4. Add cream cheese and cilantro to the mix and stir. 
  5. Place tortillas on a plate and spoon in the mixture.At this point you can add the optional toppings.

Mexican Crunchwrap

Though I've never actually seen one of these made here in Mexico, if it has a tortilla, it's Mexican. These are super fun to make and something different to put on the table. This recipe like many of the others we share can be made with different substitutions giving it a different style every time you make it. Hopefully this isn't the first time you are visiting our blog, but if it is, we always take the opportunity to tell you about a really awesome service we provide to visitors of Cancun. What you need - 
  • large burrito sized tortillas
  • refried beans
  • taco meat
  • onion
  • green onion
  • bell pepper
  • jalapeño 
  • tomato
  • crunchy taco shells, tostado shells or tortilla chips 
  • shredded cheese
  • any other goodies you like to put on your tacos
How to create - 
  1. Cook your taco meat and set aside.
  2. Heat the beans.
  3. Smear the beans on the tortilla and sprinkle cheese on top.
  4. Place your veggies on top of beans and cheese.  
  5. If you are using hard taco shells break in half and put on top of beans. If using tortilla chips crumble on top. 
  6. If you want you can add more veggies and cheese.
  7. Next, fold up the sides to close the crunchwrap. 
  8. Now heat a pan to medium heat and cover with non-stick spray. 
  9. Place the crunchwrap in the pan and you can place a pan lid on top to hold in down and together. 
  10. Cook until golden brown on both sides. 
  11. Place it on a plate on top a bed of lettuce and garnish as desired. 

Taco Lasagna

What!? Yeah I said it Taco Lasagna. This could be one of the cheapest and fastest recipes you could find. This recipe can be modified and made using so many different ingredients so be creative!

What you will need - 
Recipe from Cinnamon Spice and Everything Nice

  • 1 pound ground beef
You can substitute chicken or veggies for the beef*
  • 2 tablespoons taco seasoning
  • 2/3 cup water
  • 8-inch flour or corn tortillas
  • 1 cup salsa
  • 1/3 cup sliced green olives or a small can of chopped black olives
  • 2 cups shredded sharp cheddar cheese
  • 1 fresh ripe tomato, seeds removed, sliced thin
  • your favorite taco fixin's like shredded lettuce, sour cream, avocado, guacamole
How to create - 
  1. In a large skillet brown ground beef. Drain off the grease. Mix in the taco seasoning and water, cook 5 - 6 minutes over medium heat stirring often. Season with salt and pepper to taste.
  2. You can make this in a round casserole or deep dish pie pan (9-inch) or in an 8 x 8 square pan. Grease the pan well and preheat oven to 375 degrees F.
  3. Layer 2 tortillas over the bottom, for a square pan cut the tortillas to fit.
  4. You can make 2 or 3 layers.
  5. For 2 layers spread half the meat over the tortillas, dollop half the salsa over top then half the olives then sprinkle with 1/3 of the cheese. Repeat. Sprinkle the remaining cheese over top and then cover with the sliced tomatoes.
  6. For 3 layers spread 1/3 of the meat over the tortillas, dollop 1/3 of the salsa then 1/3 of the olives followed by 1/4 of the cheese. Repeat twice. Sprinkle the remaining cheese over top then cover with the sliced tomatoes.
  7. Bake about 25 minutes. Let set 5 minutes before serving with taco fixin's.

Salmon Tacos

What you will need - 

Recipe from Willow Bird Baking
Cilantro-Lime Slaw Ingredients:
  • 3/4 cup mayonnaise
  • fresh lime juice from half a lime
  • 1/2 teaspoon rice vinegar
  • 2 teaspoons minced garlic
  • 2 teaspoons Sriracha
  • 4 teaspoons sugar
  • 3 tablespoons finely chopped fresh cilantro
  • 1/4 red onion, very finely minced
  • about 5 1/4 cups slaw mix (bagged cabbage and carrot shreds)

Sriracha Aioli Ingredients:
  • ½ cup mayonnaise
  • 2 tablespoons Sriracha
  • fresh lime juice from half a lime
  • 1/2 teaspoon cumin
  • 1 teaspoon sugar 
  • pinch salt

Taco Ingredients:
  • 1 teaspoon cumin
  • 1 teaspoon chili powder
  • 1 teaspoon brown sugar
  • 1 teaspoon salt
  • 1 pound salmon
  • 2 tablespoons olive oil
  • 8-9 tortillas corn or flour 
  • chopped cilantro
  • sliced jalapeños, for topping
How to create - 
  1. Make the Cilantro-Lime Slaw: (Note: It's best if you can prepare the slaw and Sriracha Aioli a few hours to a full day in advance.) In a medium bowl, whisk together mayonnaise, lime juice, rice vinegar, garlic, Sriracha, and Swerve sweetener until the sweetener is dissolved. In a large bowl, toss the cilantro, red onion, and slaw mix together to mix. Add the mayonnaise mixture about a cup at a time, tossing as you go, until all your vegetables are coated to your preference. Cover tightly and chill until ready to serve tacos.
  2. Make the Sriracha Aioli: Whisk together the Sriracha aioli ingredients and cover tightly. Chill until ready to serve tacos.
  3. Make the salmon: Whisk together the cumin, chili powder, brown sugar, and salt. Rub the spice mix on the salmon (on both sides if it's skinless, but on just the exposed side if it's skin-on.) Heat the olive oil in a medium skillet over medium heat until shimmering. Place the fish in skin side down and cook without disturbing for 4-5 minutes before turning over and cooking for 4 minutes on the other side (thicker cuts might need 6-7 minutes per side). Remove the fish from the heat, tent it with foil, and allow it to rest for 10 minutes. The fish will flake apart easily when done.
  4. Assemble the tacos: Fill each tortilla with slaw, a few hunks of salmon, a small handful of fresh cilantro, a few slices of jalapeño, and a drizzle of Sriracha aioli.

Tacos al Pastor - Slow Cooker Recipe

One of our favorite things to eat here in Cancun is tacos de pastor! These pork tacos were influenced
by Lebenese, Turkish and Greek styles that were adapted and developed in the central of Mexico. The pork meat is prepared for cooking by marinating it in a mixture of chiles, spices and pineapple. In case you didn't know pineapple has a natural enzyme that tenderizes the meat by breaking down the proteins. In some regions people like to add achiote for little twist. Typically cooked on an open fire spit or trompo, these tacos are delicioso. When the meat is cooked it's then sliced thinly onto corn tortillas and garnished with onion, cilantro and pineapple. 
We've found an alternative way for you to make these at home since you probably don't have one of these in the back yard!

What you need -  


  • 1 (5-pound) boneless pork shoulder roast, fat trimmed off
  • 1 (12-oz.) bottle of beer 
         (I like Modelo Negro)
  • 2 chipotles in adobo sauce
  • 1 fresh pineapple cut into small pieces 
  • 1/2 cup chopped white or red onion
  • 3 tablespoons chili powder (not cayenne)
  • 2 tablespoons fresh lime juice
  • 2 tablespoons white vinegar
  • 2 teaspoons kosher salt
  • 1 teaspoon ground cumin
  • 1/2 teaspoon black pepper
  • corn tortillas, for serving
  • optional toppings: crumbled goat cheese, diced fresh pineapple, chopped fresh cilantro leaves, diced onion, diced avocado, thinly-sliced radishes
How to create 

Cut the pork shoulder into 2-inch cubes. Add the pork to the bowl of the slow cooker.
Add the chipotles in adobo, pineapple, red onion, chili powder, lime juice, white vinegar, salt, cumin and black pepper to a blender or food processor. Puree until the mixture is completely smooth, about 30-60 seconds. Stir in the beer until it is evenly combined. Then pour the mixture on top of the pork, and toss until the pork is evenly coated.
Cook on low for 8-10 hours, or on high for 4-5 hours, until the pork is completely tender and shreds easily with a fork. Use two forks to shred the pork, then toss it in the remaining juices.
Serve warm on tortillas, garnished with optional toppings.

Dorito Chicken Bake

(Makes 4 Servings)

What you need 


  • 2 cups shredded cooked chicken
  • 2 cups shredded Mexican cheese blend (divided)
  • 1 (10 oz) can cream of chicken soup
  • ½ cup milk
  • ½ cup sour cream
  • 1 can Ro-tel tomatoes (drained)
  • ½ packet taco seasoning
  • 1 large bag Doritos
  • Shredded lettuce (optional)
  • diced tomato (optional)


How to Create


Pre-heat the oven to 350 degrees. In a large bowl mix together shredded chicken, 1 cup of cheese, cream of chicken soup, milk, sour cream, Ro-tel tomatoes, and taco seasoning. Mix well.

Grease a 2-quart casserole dish, and add a layer of crushed Doritos across the bottom. Top with a layer of the chicken mixture. Add another layer of crushed Doritos, and then add another layer of the chicken mixture. Top with remaining cheese. You can add more crushed Doritos on top as well if you wish.

Cover and place into the oven and bake at 350 degrees for 30-25 minutes until bubbling hot. Remove from the oven and top with lettuce and tomato if you choose.

Chicken Flautas

What you will need ~

  • 4 chicken breasts, bone in
  • salt and pepper to taste
  • 2 tablespoons chicken stock, plus extra for tortillas
  • 1 onion, chopped
  • 1/2 poblano pepper, chopped
  • 1/2 green bell pepper, chopped
  • 1 cup canned tomato, drained and chopped
  • 12 corn tortillas
  • cooking spray

How to prepare ~
Season chicken with salt and pepper and roast in oven for about 1/2 hour. When it's cooked through, remove bones and skin and shred the chicken.

Heat the chicken stock in a sauté pan over medium heat. Add onion and peppers and sauté until onion is translucent.

Add tomatoes and shredded chicken and simmer for 10 minutes.

Remove from heat, cool and drain any excess liquid.

Soften tortillas with a bit of chicken stock and place chicken mixture in the center. Roll up tightly and seal with two toothpicks. Spray lightly with cooking spray.

Place seam side down on medium flame on grill and turn while cooking until crispy - about 5-7 minutes.

You can also bake them in a preheated 375°F oven for about 20 minutes until crisp. Remove from grill, cut in half and remove toothpicks.

Taco Cupcakes



It's funny how just by changing the thing that you use to fill the "taco" with you change the name of the dish. If you were to add the filling to soft tortillas and bake you now have enchiladas, if you were to add it to flat crunchy tortillas it would be called a tostada. Making taco cupcakes just sounds like a ton of fun! You know what they say, "presentation is everything," and who doesn't love cupcakes? As with any recipe you can modify the ingredients to your liking but this will give you ideas to get started. 
*To make this a breakfast dish substitute the ground beef with a scrambled egg and bell pepper mix! 

What you will need~

  • 1 1/2 lb lean ground beef
  • 1 (15-oz.) can spicy chili beans
  • 1 package taco seasoning mix
  • 1/2 cup water
  • 1 can refrigerated buttermilk biscuits (here in Cancun you will need a package of dry biscuit mix)
  • 1 cup shredded Cheddar cheese 
  • 1/2 cup shredded lettuce
  • 1/2 cup chopped tomato
  • 1/2 cup sour cream
  • 1/2 cup salsa


How to make ~
  1. Heat oven to 375°F. Brown ground beef in large skillet over medium-high heat until thoroughly cooked, stirring frequently. Drain.
  2. Add chili beans, taco seasoning mix and water, mix well. Reduce heat to medium, simmer 10 minutes or until ground beef mixture is slightly thickened, stirring occasionally.
  3. Meanwhile, spray outside bottom and sides of a cupcake/muffin pan lightly with nonstick cooking spray. Separate dough into 8 biscuits. Roll or pat each biscuit to form 4 1/2-inch round. Place rounds over outside of sprayed cups; press to fit over bottom and partway down sides of cups. Place cups, upside down, in ungreased 15x10x1-inch baking pan.
  4. Bake at 375°F. for 14 to 16 minutes or until deep golden brown. Remove pan from oven. Carefully remove biscuit cups from pan. Place biscuit cups, right side up, in same baking pan. Spoon beef mixture evenly into each cup.
  5. Top with cheese, lettuce, tomato, sour cream and salsa.

Oven Baked Tacos

This recipe is about as simple as it gets! Requiring few ingredients, minimal preparation and cook time this is a great recipe to make at home or while you are visiting us here in Cancun. Not all our visitors stay in an all inclusive hotel which makes We Deliver Cancun such a great service to be offered. We Deliver is an online grocery store where you can do your grocery shopping online before you arrive to your home away from home and we deliver the goods to you. This allows you to avoid the confusion of foreign brands, a foreign language and currency conversion in addition to the  time away from the beach! What you will need ~
  • ground beef
  • refried beans
  • taco seasoning
  • 1/2 can tomato sauce
  • tortillas (soft or hard)
  • shredded cheese
How to prepare ~

Brown your ground beef and drain completely - then add refried beans, taco seasoning and about half a can of tomato sauce. Mix together and scoop into taco shells, (stand them up in a casserole dish).

Sprinkle the cheese on top and bake at 375° for 10 minutes!

Please note, hard taco shells are not found here in Cancun in the form that you are used to. They actually come flat like pancakes called tostadas. If you would like to try making your own homemade tortillas you can check out the link to this recipe!

Smothered Burritos

Ingredients ~

  • 2 lbs stew meat (or cubed beef)
  • 1 (20 oz) can mild red enchilada sauce
  • 2 beef bouillon cubes
  • ½ can refried beans
  • 5-7 large flour tortillas (warmed)
  • 1 ½ cups shredded cheddar cheese
  • lettuce and tomato for optional topping

Directions ~


Step 1~ Add cubed beef, beef bouillon cubes, and enchilada sauce into a crock pot. Cover and cook on low for 7-8 hours. Heat up refried beans in a microwave safe dish or in a small saucepan on the stove top.

Step 2 ~ Preheat the oven to 375 degrees. Lightly grease a 9×13 inch baking dish. Lay out a flour tortilla onto a flat surface. Place a thin layer of refried beans into the center of the tortilla, add about ½ cup of the meat mixture onto the burrito with a slotted spoon (make sure to drain most of the liquid). Fold the sides of the burrito in, then roll from the other sides until you have a package formed. Place the burrito seam side down into the casserole dish. Spoon some of the remaining enchilada sauce in the crock pot over the burrito and top with shredded cheddar cheese. Repeat until all of the burritos are rolled and in the casserole dish.

Step 3 ~ Place into the oven and bake at 375 degrees for 15-20 minutes or until the cheese has melted. You can also place the burritos onto microwave safe plates, and microwave for about 30 seconds until the cheese has melted.

Side Notes ~ You can substitute the meat for shrimp or chicken.

Caribbean Fish Tacos




For the tacos ~
Recipe by Nisa Burns

1 Tbsp olive oil
1 lb tilapia fillets or another lean white fish 
corn or flour tortillas
limes
avocado, peeled, pitted, and sliced
½ head of cabbage, shredded
5 tbsp Mango Lime Salsa


  • How to prepare the tacos ~
    • Heat the oil in a frying pan over medium heat. Place the fish in the pan and cook for 2 to 3 minutes on each side. It should be flaky and milky white when done. Overcooking will cause it to be dry and tough. Divide the fish into five servings.
    • Place one serving of fish on each tortilla. Squeeze the limes over the fish, add the avocado slices, and top with the shredded cabbage and Mango Lime Salsa.
For the salsa ~
  • ripe mango, peeled, pitted, and diced small (about 1½ cups)
  • ½ medium red onion, finely chopped
  • jalapeno, finely chopped (include ribs and seeds for a hotter taste)
  • 3 tbsp fresh cilantro, chopped
  • 3 tbsp fresh lime juice
  • ½ avocado, peeled, pitted, and diced small 
  •   (about 1½ cups) peeled, cored, and diced small
  • ½ tsp salt
  • ½ tsp pepper
How to prepare the salsa ~
Combine all of the ingredients except the salt and pepper in a bowl. Season with salt and pepper.

Beef Tostadas

What you will need ~

  • 1-1/2 pounds boneless beef round steak
  • 1/2 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/4 cup lime juice
  • 3 garlic cloves, finely chopped
  • 1 jalapeño, seeded and finely chopped
  • 1 large onion, chopped
  • 1 tablespoon chili powder (or a combination of cumin, garlic powder, onion powder, cayenne pepper)
  • 1/4 teaspoon cumin
  • 1/8 teaspoon cayenne pepper
  • 12 packaged tostada or hard taco shells
  • Refried beans
  • Cooked Onions and Peppers (see note below)
  • Shredded iceberg lettuce
  • Shredded Mexican-blend cheese or Chihuahua Cheese
  • Salsa
  • Guacamole
  • Sour Cream

How to Make ~ 


Sprinkle steak with salt and pepper. Place 3 tablespoons of the lime juice, the garlic, jalapeño, onion, chili powder, cumin and cayenne in a slow cooker. Place meat on top and cook on HIGH for 6 hours or LOW for 8 hours.


Remove beef to a cutting board and when cool enough to handle, shred with fingers or using two forks. Place shredded beef in a large bowl. Strain remaining liquid in slow cooker over a bowl or measuring cup, discarding solids. Add strained liquid and remaining 1 tablespoon lime juice to beef in bowl and stir to combine. Cover; keep warm.


For onions and peppers, cook in a little bit of oil with the same seasoning as your beef. I let them caramelize a little then add water a little bit at a time until they are soft. That is the way we prefer them. If you like them crunchy then don't cook them as long. We like to add red pepper, not only for color but for a little added sweetness.


Warm tostada shells in the oven. 200 degrees for about 5 minutes. Spread beans, then layer the rest of the toppings on top.

Chimichangas

One thing that I really miss about Mexican food in the States, ironically, are chimichangas. They aren't typical of this region so when I found this recipe I was super excited to share it. What you will need ~ 
  • 8 oz pkg. cream cheese
  • 8 oz. Pepper Jack cheese, shredded
  • 1 1/2 Tbsp. taco seasoning
  • 1 lb. cooked chicken, shredded
  • 8 flour tortillas
  • cooking spray
  • shredded cheddar cheese
  • green onions, for garnish
  • sour cream
  • salsa
  • shredded lettuce

How to Make ~ 
  1. Stir together cream cheese, Pepper Jack cheese and taco seasoning.
  2. Fold in chicken.
  3. Divide among flour tortillas.
  4. Tuck in sides, and roll up each tortilla.
  5. Lay seam side down in a sprayed 9x13" baking dish.
  6. Spray tops of tortillas with cooking spray.
  7. Bake at 350 for 15 minutes.
  8. Turn chimi's over, and bake an additional 15 minutes.
  9. Serve with cheddar cheese, green onions, sour cream, lettuce and salsa.
