Churro Waffles

I found this recipe at Chica Chocolatina and I have to say I LOVE this site. If you have a sweet tooth you have to check it out but only after you finish this post, you have to promise! Not only are the recipes good, that chick is a great writer and I will be quoting some of her words. As always this blog is out there in cyber land to bring attention to our little business we have here is paradise called We Deliver Cancun.  We Deliver is an online grocery store that has just about anything you need to survive your week of vacation in the Riviera Maya. Now, have you ever had a churro? If you've ever watched Two and a Half Men or the Big Bang Theory they make references to this sweet Mexican treat. Jasmin describes a churro like this, "A churro is a golden rod of pure deliciousness twisted and rolled into lots and lots of sweet cinnamon and sugar right after it's taken a crispy bath in steaming hot oil. With one bite you are plunged into a world where both spicy and sweet live harmoniously under the Mexican sun. " 

Sounds amazing right! I especially love when I find recipes that somehow mix Mexican flavors, styles and ingredients with other cultures. In this case Mexican dessert meets American breakfast, yes my friends, a churro waffle. Let's get it on!

What you will need - 

1 teaspoon salt
4 teaspoons baking powder
2 tablespoons white sugar
2 eggs
2 cups all purpose flour 
1 1/2 cups warm milk

1/3 cup butter melted
1 teaspoon vanilla extract
3 shakes of cinnamon                            
  
For the churro topping-
1 cup of white sugar
1/4 cup to 1/2 cup of cinnamon 

(depending upon how much you love cinnamon!)
1/2 cup of melted butter


How to prepare your waffles - 

1. In a large bowl mix together flour, salt, baking powder and sugar then set aside. 
2. Combine churro toppings and set aside. 
3. Preheat your waffle maker.
4. In a bowl beat your eggs like bad children then stir in the milk, butter and vanilla. 
5. Then pour the milk mixture into the flour mixture from step 1 along with the 3 shakes of cinnamon. 
 6. Melt the 1/2 cup of butter and keep warm while you make the waffles. 
7. Spray the waffle iron with non stick cooking spray. Ladle the batter into the waffle iron when it is hot and ready. Cook the waffles until crisp.
8. As soon as you remove from the waffle iron pour the melted butter over the waffle and dip both sides into the churro topping mix of cinnamon and sugar. 
9. If you like you can add a little syrup. Enjoy!

Apple Pie Tacos - YUM!

With the 4th of July just a few days away we decided to bring you a classic American dessert with a Mexican twist! Great for BBQs and get togethers, you can serve this dessert without flatware and plates. Lets get cookin!

Taco Shells
  • 6 large Flour Tortillas
  • Oil for frying
  • ⅔ cup sugar
  • 2 teaspoons cinnamon
Filling
  • 1 - 21 oz can apple pie filling, chop to small pieces
OR
  • 3 large apples
  • 1½ tablespoons butter
  • 3 tablespoons brown sugar
  • 1 teaspoon lemon juice
  • 1 teaspoon cinnamon
  • 1 teaspoon cornstarch
  • ½ cup water (divided)
Other
  • Frozen Whipped Topping
  • Caramel sauce 

How to create 
  1. Using a circle cookie cutter cut circles from the tortillas. A 3 to 3.5 inch cutter is a good size for the tacos.
  2. Combine sugar and cinnamon in a bowl and set aside. You will need in the next steps.
  3. Heat enough oil in a pan to submerge the tortillas. You can use a scrap of tortilla to test the oil if it is ready.
  4. Using some tongs, place a circle in the oil for about 5 seconds. Turn it over and fold in half holding it in the taco shape for another 5 seconds or until it's browned. Flip over once more and cook until it's crispy.
  5. Once crispy remove from oil, shake and gently cover the tacos with sugar and cinnamon in the bowl. 
  6. Set it in a pan to cool and they can be left up to 3 days at room temperature. 

To make the filling - 
  1. Peel and dice the apples the toss in lemon juice to keep them from browning. 
  2. Over meadium heat stir together apples, butter, sugar and cinnamon. 
  3. Add 1/4 cup of waterand continue cooking for about 4 minutes.
  4. Add another 1/4 cup of water and 1 teaspoon of cornstarch.
  5. Cook until all the liquid is gone and apples are soft. 
To assemble the tacos - 
  1. Flip a muffin pan upside down to hold your tacos upright.
  2. Fill each taco with 2 to 3 spoons of filling. 
  3. Top with whipped cream, frozen topping and/or carmel sauce.
  4. ENJOY!

Strawberry Margarita Jello Shots

24-30 Strawberries

Margarita Mix

1 box strawberry Jell-O
8 ounces tequila, preferably reposado or blanco
6 ounce Cointreau
Salt for garnish

How to make ~
Strawberry Prep

Cut the bottoms of the strawberry flat to get them to stand upright. When you do so, make sure that you do not cut off so much that there is a hole at the bottom.
Use a huller or apple corer to empty out the strawberry.
Once the strawberries have been emptied, use a towel to pat the outside of the strawberries dry.
Check each strawberry and make sure there is not a hole in the bottom before you start filling.

Margarita Mix

Boil one cup of hot water in a saucepan, then add in Jell-o powder and whisk until powder is completely dissolved, about 2 minutes. Set aside. Measure out 1/4 cup of cold water and set aside.
Combine tequila and Cointreau, in cocktail shaker filled with ice. Add liqueur mixture to cold water and stir to combine. Then add cold liqueur mixture to hot Jell-o mixture and stir to combine.
Pour final Jell-o mix into strawberries and chill overnight. Dip your finger in water or use a moistened brush to wet the edge of the strawberries, dip and rotate the strawberries in salt to rim. Garnish with a slice of lime to finish.

Fruit Salsa & Cinnamon Chips

What you will need ~

For the fruit salsa~
  • 2 kiwis, peeled and diced
  • 2 apples – peeled, cored and diced
  • 8 oz raspberries
  • 1 (16 oz) carton of strawberries, diced
  • 2 tbsp white sugar
  • 1 tbsp brown sugar
  • 3 tbsp fruit preserves, any flavor 
For the cinnamon chips ~
  • 10 (10 inch) flour tortillas
  • melted butter or butter flavored cooking spray
Cinnamon sugar ~
  • 1 cup white sugar
  • 2 tbsp cinnamon

How to make ~

1. In a large bowl, thoroughly mix kiwis, apples, raspberries, strawberries, white sugar, brown sugar, and fruit preserves. Cover and chill in the refrigerator at least 15 minutes while the oven preheats to 350 degrees.

2. Coat one side of each flour tortilla with melted butter or butter flavored cooking spray. Sprinkle tortillas with desired amount of cinnamon sugar, cut into wedges, and arrange in a single layer on a large baking sheet. Spray again with cooking spray (not necessary if using melted butter).

3. Bake in the preheated oven 8 to 10 minutes. Repeat with any remaining tortilla wedges. Allow to cool approximately 15 minutes. Serve with chilled fruit mixture. This salsa can also be served with cinnamon graham crackers or cinnamon pita chips. Best when made and eaten the same day otherwise the fruit gets too much juice and it gets runny.

Coconut Stuffed Limes

This recipe is from the small south-western state of Mexico called Colima where candies made from coconut are famous. The candied limes maintain a slight bitterness which pairs very nicely with the sweet coconut. You might be wondering why we are sharing recipes on our online grocery store blog... Cancun Best Discounts has recently launched an extension of the company called WE Deliver Cancun. Since there isn't much to talk about on the blog we thought we would share some of our favorite Mexican inspired recipes. These can be made at home or with the products you can buy online and have us deliver to you here, so you can enjoy some great Mexican dishes in Mexico!   I / WE hope you try some of them and enjoy. :) Be sure to leave feedback in the comments section!


What you will need to make these tasty natural candies ~

  • 2 teaspoons of baking soda
  • 12 medium - large sized limes washed thoroughly
  • 2 1/2 cups of sugar
  • 2 cups of fresh shredded coconut
  • 172 cup water
How to prepare ~

Bring 2 quarts of water to a boil, add 1 teaspoon of baking soda and stir then add the limes. Cook at a soft simmer until tender for about 10-15 minutes or until slightly tender. Remove the limes and let cool. Make a small incision on the top of each lime with a sharp knife, remove the inside while making sure not to tear the skin of the lime. Once all the limes have been cleaned out, discard the inner part and return the limes to the pot covering them with cold water and the remaining 1 teaspoon of baking soda. Bring to a boil, strain, and repeat process without adding more baking soda to remove all the bitterness from the limes. 
Return the limes to the pot for the last time covering them with just enough cold water then stir in 1 1/2 cups of sugar. Cook over medium-low heat  stirring occasionally until the sugar has made a syrup the same consistency as maple syrup, about 15-20 minutes. Remove from heat letting it cool in the pot then remove and let dry on a wire rack if possible. 
Combine the coconut, 1 cup of sugar and 1/2 cup of water and cook over medium heat. Stir occasionally and cook until the coconut is thick, almost translucent. Let cool until safe to handle.
Fill the limes with the coconut and let cool completely. You can then eat or store in an air tight container with wax paper for up to 2 months.
