What you will need ~
For the fruit salsa~
- 2 kiwis, peeled and diced
- 2 apples – peeled, cored and diced
- 8 oz raspberries
- 1 (16 oz) carton of strawberries, diced
- 2 tbsp white sugar
- 1 tbsp brown sugar
- 3 tbsp fruit preserves, any flavor
For the cinnamon chips ~
- 10 (10 inch) flour tortillas
- melted butter or butter flavored cooking spray
Cinnamon sugar ~
- 1 cup white sugar
- 2 tbsp cinnamon
How to make ~
1. In a large bowl, thoroughly mix kiwis, apples, raspberries, strawberries, white sugar, brown sugar, and fruit preserves. Cover and chill in the refrigerator at least 15 minutes while the oven preheats to 350 degrees.
2. Coat one side of each flour tortilla with melted butter or butter flavored cooking spray. Sprinkle tortillas with desired amount of cinnamon sugar, cut into wedges, and arrange in a single layer on a large baking sheet. Spray again with cooking spray (not necessary if using melted butter).
3. Bake in the preheated oven 8 to 10 minutes. Repeat with any remaining tortilla wedges. Allow to cool approximately 15 minutes. Serve with chilled fruit mixture. This salsa can also be served with cinnamon graham crackers or cinnamon pita chips. Best when made and eaten the same day otherwise the fruit gets too much juice and it gets runny.

For the tacos ~
1 Tbsp olive oil
1 lb tilapia fillets or another lean white fish
5 corn or flour tortillas
2 limes
1 avocado, peeled, pitted, and sliced
½ head of cabbage, shredded
5 tbsp Mango Lime Salsa
- How to prepare the tacos ~
- Heat the oil in a frying pan over medium heat. Place the fish in the pan and cook for 2 to 3 minutes on each side. It should be flaky and milky white when done. Overcooking will cause it to be dry and tough. Divide the fish into five servings.
- Place one serving of fish on each tortilla. Squeeze the limes over the fish, add the avocado slices, and top with the shredded cabbage and Mango Lime Salsa.
For the salsa ~
- 1 ripe mango, peeled, pitted, and diced small (about 1½ cups)
- ½ medium red onion, finely chopped
- 1 jalapeno, finely chopped (include ribs and seeds for a hotter taste)
- 3 tbsp fresh cilantro, chopped
- 3 tbsp fresh lime juice
- ½ avocado, peeled, pitted, and diced small
- (about 1½ cups) peeled, cored, and diced small
- ½ tsp salt
- ½ tsp pepper
How to prepare the salsa ~
Combine all of the ingredients except the salt and pepper in a bowl. Season with salt and pepper.

What it takes ~
- 2 cans of chipotle chilies in adobo sauce
- 2 cups of canned tomatoes
- 1/4 cup chopped onion
- 3 tablespoons of tomato paste
- 2 tablespoons of honey
- 2 garlic cloves chopped
- cilantro
- 1 tsp grated orange zest
- 1/4 orange juice
- 1/2 salt
How to prepare ~
If you like it spicy just add chilies such as jalapeño or habanero.
Puree in blender until smooth.
In a saucepan bring mix to a boil, then lower heat to simmer until it's cooked to your liking (approx 5 mins)

- 3 cloves garlic, minced
- 1 teaspoon salt
- 2 tablespoons fresh lime juice
- 1/4 cup chopped red onion
- 3 tablespoons olive oil
Directions ~
In a medium bowl, combine the mango, avocado, tomatoes, jalapeno, cilantro, and garlic.
Stir in the salt, lime juice, red onion, and olive oil.
To blend the flavors, refrigerate for about 30 minutes before serving.

- 8 cups tomatoes, peeled, chopped and drained
- 2 1/2 cups onions, chopped
- 1 1/2 cups green peppers
- 1 cup jalapeno pepper, chopped
- 6 garlic cloves, minced
- 2 teaspoons cumin
- 2 teaspoons pepper
- 1/8 cup canning salt
- 1/3 cup sugar
- 1/3 cup vinegar
- 1/3 cup Cilantro if you prefer
- 1 (15 ounce) can tomato sauce
- 1 (12 ounce) can tomato paste
How to make -
- Mix all together and bring to a slow boil for 10 minutes.
- Seal in jars and cook in hot water bath for 10 minutes.
- This is a medium salsa. This is also a chunky salsa so if you want a smoother salsa cut your veggies into smaller pieces.
- Add 2 tbsp. Freshly squeezed lime juice, salt and pepper to taste.
- Mix everything together and let sit overnight for flavors to meld.
Makes 3-6 quarts or pints.
