Mango Habanero Margaritas = OMG!

If you relish margaritas, mangoes and spicy anything like I do you are going to LOVE this recipe! The best thing about margaritas is that they don't have to be boring or traditional. There are endless ways that you can prepare and impress your friends using the juice of the Mexican gods - tequila!

If your drinking buddy can't handle the spicy like you can I'm going to share with you how to manipulate the level of flamage desired. What you will need to create these delicious margaritas - 

For the mango puree - 
  • 3 mangoes 
  • 2 large lemons 
  • 1 large lime
  • 1 habanero
  • 3/4 cup of water
For the margarita -
  • 6 oz of tequila blanco
  • 2 oz of Triple Sec
  • 2 oz of fresca
  • 1 quart of the mango puree that you have prepared
How to prepare - If possible you will want to prepare the mango puree the day before you want to serve your margaritas. This is where you begin to govern the level of heat. If you want knock your socks off spicy, blend the habanero with the puree to marinate. The longer you leave it, the hotter it will get. If you want not too much to please your guests, wait until closer to serving time to add it. You can leave the habanero out of the puree and just add the sliced wheels as a garnish like in the photo. Remember the seeds can pack a punch! 

     To make the puree - 
  1. You will add the following to the blender or food processor : the mangoes (peeled and cut), juice from the lemons and lime, the habanero if so desired and water. 
  2. Blend
  3. Store in the refrigerator overnight if making the day before. 
     To make the margaritas - 
  1. Put ice into a margarita pitcher.
  2. Add the mango puree, tequila, Triple Sec, fresca and stir. If you want a frozen or blended margarita use a blender instead of a pitcher. 
  3. To rim the glasses (this recipe makes 4 glasses): mix salt and chili powder and spread on a plate. Rub a slice of line around the rim of the glass and place into the mixture on the plate. 
  4. Pour in the margarita adding more ice if desired. 
  5. Garnish with habanero and lemon wheels. 
  6. CHEERS OR IN SPANISH "SALUD" AND ENJOY!

Jalapeno Watermelon Margarita

Sweet and spicy margaritas made with fresh watermelon puree, lime juice, Triple Sec, and jalapeno-infused tequila.
Serves: 4 (Depending who you share with!)

Ingredients

  • 1 jalapeño, thinly sliced
  • ¾ cup white tequila
  • 8-10 cups watermelon chunks
  • ½ cup fresh lime juice
  • 1/3 cup Triple Sec
  • ¼ cup simple syrup
  • Salt, chili powder and lime juice for rimming the glasses

How to Create
  1. Place tequila and about 4 slices of jalapeno in a glass measuring cup and place in the refrigerator for 1 to 4 hours depending on how spicy your jalapenos are and how spicy you want the tequila to be. Take a taste after 1 hour and decide whether it is spicy enough. If so, remove jalapeños.
  2. Place watermelon (you may need to do it in batches) in a blender and blend until liquefied.
  3. Pour watermelon through a fine-meshed strainer, pressing on it with the back of a spoon to get all the liquid through. Measure out 3 cups of watermelon juice.
  4. In a large pitcher, combine the 3 cups watermelon juice, tequila, lime juice, Triple Sec, and simple syrup.
  5. Place salt with a little chili powder mixed in on a plate. Coat rims of 4 glasses with lime juice and dip in salt mixture.
  6. Fill the glasses with ice and pour Margaritas into glasses. Garnish with lime slices and jalapeno slices if desired.


Notes
To make simple syrup, combine equal parts sugar in water in a small saucepan and heat over medium heat, stirring frequently until sugar is dissolved. Remove from heat and cool. Can be stored in the refrigerator for future use.

Strawberry Margarita Jello Shots

24-30 Strawberries

Margarita Mix

1 box strawberry Jell-O
8 ounces tequila, preferably reposado or blanco
6 ounce Cointreau
Salt for garnish

How to make ~
Strawberry Prep

Cut the bottoms of the strawberry flat to get them to stand upright. When you do so, make sure that you do not cut off so much that there is a hole at the bottom.
Use a huller or apple corer to empty out the strawberry.
Once the strawberries have been emptied, use a towel to pat the outside of the strawberries dry.
Check each strawberry and make sure there is not a hole in the bottom before you start filling.

Margarita Mix

Boil one cup of hot water in a saucepan, then add in Jell-o powder and whisk until powder is completely dissolved, about 2 minutes. Set aside. Measure out 1/4 cup of cold water and set aside.
Combine tequila and Cointreau, in cocktail shaker filled with ice. Add liqueur mixture to cold water and stir to combine. Then add cold liqueur mixture to hot Jell-o mixture and stir to combine.
Pour final Jell-o mix into strawberries and chill overnight. Dip your finger in water or use a moistened brush to wet the edge of the strawberries, dip and rotate the strawberries in salt to rim. Garnish with a slice of lime to finish.
