Chicken Flautas

What you will need ~

  • 4 chicken breasts, bone in
  • salt and pepper to taste
  • 2 tablespoons chicken stock, plus extra for tortillas
  • 1 onion, chopped
  • 1/2 poblano pepper, chopped
  • 1/2 green bell pepper, chopped
  • 1 cup canned tomato, drained and chopped
  • 12 corn tortillas
  • cooking spray

How to prepare ~
Season chicken with salt and pepper and roast in oven for about 1/2 hour. When it's cooked through, remove bones and skin and shred the chicken.

Heat the chicken stock in a sauté pan over medium heat. Add onion and peppers and sauté until onion is translucent.

Add tomatoes and shredded chicken and simmer for 10 minutes.

Remove from heat, cool and drain any excess liquid.

Soften tortillas with a bit of chicken stock and place chicken mixture in the center. Roll up tightly and seal with two toothpicks. Spray lightly with cooking spray.

Place seam side down on medium flame on grill and turn while cooking until crispy - about 5-7 minutes.

You can also bake them in a preheated 375°F oven for about 20 minutes until crisp. Remove from grill, cut in half and remove toothpicks.

Grilled Avocados

Ingredients ~ 
  • 1 avocado
  • 1 tablespoon chipotle sauce, Tabasco or Louisiana
  • 1 tablespoon lime juice
  • ¼ cup parmesan cheese
  • Salt and pepper

How to Make ~

1. Slice the avocado in half and remove the seed. Prick all over with a fork, or cut criss-cross patterns with a knife. This allows the sauce to penetrate the flesh.


2. Pour the sauce over each half, then top with lime juice and salt and pepper.


3. In the cavity where the seed was, put a fourth of the cheese on each avocado half. Place under the hot grill for 2 minutes. 


4. Top with remaining cheese and grill for another 2 minutes until completely melted and avocado warmed through.

Eat hot with a wedge of lime and chipotle sauce on the side!

Cheese & Chorizo Stuffed Peppers

Ingredients ~


Cooked on the grill the stuffed jalapeño peppers emerge with a wonderful fire-roasted flavor. Jalapeño peppers range in their level of heat so if you aren't sure if it will be too spicy you can also substitute the jalapeños with poblanos or bell peppers. Directions ~

Prepare a grill for grilling to medium-high heat. Since you probably don't have one of those fancy pepper holders to grill the peppers, you can grill the peppers whole. Cook to your liking and remove from grill. Using a knife you can scrape any charred spots. 
In a pan over medium-high heat, warm the olive oil. Add the onion, season with salt, and cook until the onion is soft and translucent, 6 to 8 minutes. Add the chorizo and cook, crumbling with a wooden spoon until the meat is cooked through, 5 to 7 minutes. Transfer the chorizo mixture to a paper towel-lined plate and then transfer the chorizo mixture to a small bowl, add the cheese and stir to combine. 

Cut off the top of each jalapeño pepper. Using a skinny knife, hollow out the centers of the peppers, removing the seeds and ribs but don't cut through the flesh. 
*You may want to wear gloves when handling raw jalapeños.

Using your fingers, stuff the center of each pepper with 1 to 2 spoons of the chorizo mixture, pressing it down to fill the entire pepper. (Any leftover filling can be used for nachos or scrambled eggs.)

Mexican Style Brats

I don't mean bad little Mexican kids! I'm talking delicioso Mexican style Bratwurst / Polish sausages. You can find all these ingredients here, minus the Cajun spice. Things you will need ~ 

  • 1/2 of package, then cut in half - Polish Sausage with Jalenpeño
  •  1/3 Yellow Pepper
  •  1/3 Red Pepper
  •  1 Jalepeño
  • 1/3 Red Onion
  • Olive Oil - few teaspoons
  • Submarine Style Bread/Buns
  • Garlic Powder
  • Weber's Cajun Spice
(The spice is key to almost all my recipes!)

Makes 2 Brats, use the other half of the package to make 4. and double the veggie part of the recipe.

While you are cutting the sausage and veggies place a few teaspoons of olive oil in the pan to heat. Once everything is cut, throw in the pan with everything sprinkled /covered in the Cajun spice and cook until veggies are soft and sausage is browned. You can cook on a BBQ for that delicious BBQ flavor! Another way to cook this on the BBQ is to make aluminum foil pockets, add sausage, peppers, onions and a little of your favorite beer! YUM
To toast the bead place a few teaspoons on olive oil in a separate pan to heat at the same time as the veggies and sausage are cooking. Cut the bread in half, sprinkle with garlic powder and place in pan to toast.



Place veggies and sausage on the toasted bread and add spicy mustard if desired. ENJOY!!
