Stupid Easy Taco Bags

If you are looking for an easy to make, easy to take on the go recipe this is it! Minimal cooking, preparation and ingredients needed to make this. Great for kids, the busy adult or a fast taco fix. What you will need -

  • 1 1/2 lb Ground Beef
  • 2 tbsp Taco Seasoning
  • 7 Lunch size bags Nacho Doritos, Cool Ranch Doritos and/or Fritos
  • Shredded Lettuce
  • Shredded Cheese
  • Diced Tomatoes
  • Jalapeno Slices
  • Taco Sauce
  • Sour Cream, etc.
How to create - 
  • Brown ground beef and drain.
  • Add seasoning and 1/4 cup water.
  • Simmer for 15-20 minutes.
  • Gently crush chips in each bag.
  • Open top and roll down edges of bag.
  • Add a meat and cheese and your favorite toppings and gently toss with a plastic fork.

How to Treat a Sunburn with Natural Products

 If you have ever had the likes of sunburn or seen it on someone else, we probably don't have to tell you the importance of wearing protectant. Not only does it hurt like H-E-double hockey sticks, but it is dangerous and because it can affect your immune system, can cause you to become very sick. Some of the most severe symptoms are; fever, swollen glands, nausea, vomiting, blisters and headaches. If you are experiencing any of these signs, bypass the treatments we are suggesting and see a doctor because these could be signs of infection.  For mild to moderate sunburns some of the following remedies have proven to be soothing and helpful. We included various treatments and you can choose depending on what you have available. 
First, before you begin trying any of these treatments, it’s a good idea to take a cool shower. A hot shower will not only hurt but it will dry out your skin even more. Cleanse with mild soap and the cool water will pull some of the burn out of your skin. Drinking a lot of water will help your skin hydrate from the inside out. If you are on vacation, chances are that the hotel only has a shower, but if you are in the comforts of your home you can take a bath with the following ingredients and that will greatly reduce the sting.

What you can add to a bath:
Don't forget to put everywhere!
  • 2-3 cups of vinegar, white or apple cider, either way you might smell like a pickle but from experience has proven to be the most soothing.
  • Add several tea bags to a cool bath but don’t drink the water.
  • 2 cups of oatmeal and soak for at least 30 minutes.
  • 1-2 cups of baking soda
  • ½ cup of corn starch + ½ cup of baking soda
  • 2 cups of tomato juice, it’s not only good for skunk attacks!
  • 2 cups oatmeal, ¼ cup of honey and 2 cups of milk
  • Cool water + gallon of milk


In a spray bottle here are some soothing spritzes you can make or you can soak a towel to apply directly:
  • Vinegar, white or apple cider
    OUCH!!! 
  • Tea bags
  • Cool water + ¼ cup of baking soda
  • 10-12 drops of essential oils such as lavender or chamomile.
  • Corn starch to cool water
  • Witch Hazel, works well for swelling or swollen areas.
  • Pickle juice (same as vinegar)
  • ¼ cup of lemon or lime juice to cool water in a spray bottle.
  • Mix honey with lime or lemon juice to a 80/20
  • Mix milk and honey at a 50/50


Fruits, Veggies, Plants & More:
  • Pureed strawberries applied directly to the affected area.
  • Sliced or mashed tomatoes
  • Sliced or mashed cucumber
  • Potatoes mashed, the juice is the most important.
  • Raw egg whites applied directly, cover with gauze or cool towels.
  • Boil a ¼ head of lettuce, cabbage, or strawberry leaves, strain then add to spritzer bottle once it has cooled.
  • Fresh Aloe Vera gel from the plant.

Other helpful tips to bring you comfort:
  • Cover burnt areas with cold, wet towels or frozen bags of veggies. This will help to pull the burn out of the skin.
  • Stay out of the sun until the burned areas have completely healed.
  • Avoid touching the skin and never pop a blister!! This will open the skin to infections.
  • Wear loose clothing.
  • See a doctor if you experience severe symptoms.

Churro Waffles

I found this recipe at Chica Chocolatina and I have to say I LOVE this site. If you have a sweet tooth you have to check it out but only after you finish this post, you have to promise! Not only are the recipes good, that chick is a great writer and I will be quoting some of her words. As always this blog is out there in cyber land to bring attention to our little business we have here is paradise called We Deliver Cancun.  We Deliver is an online grocery store that has just about anything you need to survive your week of vacation in the Riviera Maya. Now, have you ever had a churro? If you've ever watched Two and a Half Men or the Big Bang Theory they make references to this sweet Mexican treat. Jasmin describes a churro like this, "A churro is a golden rod of pure deliciousness twisted and rolled into lots and lots of sweet cinnamon and sugar right after it's taken a crispy bath in steaming hot oil. With one bite you are plunged into a world where both spicy and sweet live harmoniously under the Mexican sun. " 

Sounds amazing right! I especially love when I find recipes that somehow mix Mexican flavors, styles and ingredients with other cultures. In this case Mexican dessert meets American breakfast, yes my friends, a churro waffle. Let's get it on!

What you will need - 

1 teaspoon salt
4 teaspoons baking powder
2 tablespoons white sugar
2 eggs
2 cups all purpose flour 
1 1/2 cups warm milk

1/3 cup butter melted
1 teaspoon vanilla extract
3 shakes of cinnamon                            
  
For the churro topping-
1 cup of white sugar
1/4 cup to 1/2 cup of cinnamon 

(depending upon how much you love cinnamon!)
1/2 cup of melted butter


How to prepare your waffles - 

1. In a large bowl mix together flour, salt, baking powder and sugar then set aside. 
2. Combine churro toppings and set aside. 
3. Preheat your waffle maker.
4. In a bowl beat your eggs like bad children then stir in the milk, butter and vanilla. 
5. Then pour the milk mixture into the flour mixture from step 1 along with the 3 shakes of cinnamon. 
 6. Melt the 1/2 cup of butter and keep warm while you make the waffles. 
7. Spray the waffle iron with non stick cooking spray. Ladle the batter into the waffle iron when it is hot and ready. Cook the waffles until crisp.
8. As soon as you remove from the waffle iron pour the melted butter over the waffle and dip both sides into the churro topping mix of cinnamon and sugar. 
9. If you like you can add a little syrup. Enjoy!

Tortilla Breakfast Stack

When I came across this recipe I knew I had to share it with you! I have a similar recipe yet to be posted to the blog that has layers of tuna, red sauce, cheese, tortillas and cream. The first time I heard the ingredients I wasn't quite sure but once in my mouth I was hooked. This is going to be one of those recipes you will want to make all the time as well! After you've tried it please feel free to leave your comments in the section below!

Before we get to the good stuff I have to let you know why it is we even have this recipe blog. Cancun Best Discounts has an extension of the site called We Deliver Cancun. Your shopping list - 

  • 9 eggs
  • 1 (4.5 oz) can green chiles
  • 8 oz sour cream
  • 1 tablespoon taco sauce, plus more for serving
  • 1 teaspoon taco seasoning
  • 2 tablespoons vegetable oil
  • 5 flour tortillas
  • 3 cups shredded cheese
  • 2 tablespoons chopped cilantro or more (I love cilantro!)
  • diced avocado, diced tomatoes, and cilantro leaves, for garnish
  • OPTIONAL - sausage, bacon or chicken

How to prepare - 

  1. Preheat the oven to 400ºF. Spray the bottom of a 9-inch spring form pan with nonstick cooking spray.
  2. Crack the eggs into a large bowl and whisk. Season with salt and pepper. Heat a medium skillet over medium-low heat and spray with nonstick cooking spray. Add the eggs and cook, stirring gently with a spatula. When the eggs are almost done, add the green chiles. Continue to cook until done, but not completely dry. Set aside.
  3. In a small bowl, combine the sour cream, taco sauce and taco seasoning. Set aside.
  4. In a large skillet, heat 1 tablespoon of the oil over high heat. Add a tortilla and cook until browned and somewhat crispy, then flip and cook the second side. (This should go fairly quickly - if the tortilla is taking longer than a minute, turn the heat up.) Remove the tortilla to a paper towel lined plate. Repeat with the remaining tortillas.
  5. To assemble, place a tortilla in the bottom of the spring form pan. Spread ⅕ of the sour cream mixture over the tortilla, then top with ¼ of the eggs. Sprinkle on ⅕ of the cheese, then sprinkle with ½ tablespoon of cilantro. Repeat 3 more times. Place the last tortilla on top, then spread the remaining sour cream mixture over the top then top with the remaining cheese. Cover the pan with foil and bake until warmed through and the cheese is melted, 25-30 minutes. Remove from the oven and allow the stack to sit for 10 minutes. Top with chopped tomatoes, avocado, additional cilantro leaves, and a drizzle of hot sauce.

Mexican Crunchwrap

Though I've never actually seen one of these made here in Mexico, if it has a tortilla, it's Mexican. These are super fun to make and something different to put on the table. This recipe like many of the others we share can be made with different substitutions giving it a different style every time you make it. Hopefully this isn't the first time you are visiting our blog, but if it is, we always take the opportunity to tell you about a really awesome service we provide to visitors of Cancun. Vacation time is very important and must not be spent away from the beach!

What you need - 
  • large burrito sized tortillas
  • refried beans
  • taco meat
  • onion
  • green onion
  • bell pepper
  • jalapeño 
  • tomato
  • crunchy taco shells, tostado shells or tortilla chips 
  • shredded cheese
  • any other goodies you like to put on your tacos
How to create - 
  1. Cook your taco meat and set aside.
  2. Heat the beans.
  3. Smear the beans on the tortilla and sprinkle cheese on top.
  4. Place your veggies on top of beans and cheese.  
  5. If you are using hard taco shells break in half and put on top of beans. If using tortilla chips crumble on top. 
  6. If you want you can add more veggies and cheese.
  7. Next, fold up the sides to close the crunchwrap. 
  8. Now heat a pan to medium heat and cover with non-stick spray. 
  9. Place the crunchwrap in the pan and you can place a pan lid on top to hold in down and together. 
  10. Cook until golden brown on both sides. 
  11. Place it on a plate on top a bed of lettuce and garnish as desired. 

Taco Lasagna

What!? Yeah I said it Taco Lasagna. This could be one of the cheapest and fastest recipes you could find. This recipe can be modified and made using so many different ingredients so be creative!

Since there isn't much to talk about on the blog about delivering food, we thought we would share some of our favorite Mexican inspired recipes. These can be made at home or with the products you can buy online and have us deliver to you here in Cancun, so you can enjoy some great Mexican dishes in Mexico! What you will need - 
Recipe from Cinnamon Spice and Everything Nice

  • 1 pound ground beef
You can substitute chicken or veggies for the beef*
  • 2 tablespoons taco seasoning
  • 2/3 cup water
  • 8-inch flour or corn tortillas
  • 1 cup salsa
  • 1/3 cup sliced green olives or a small can of chopped black olives
  • 2 cups shredded sharp cheddar cheese
  • 1 fresh ripe tomato, seeds removed, sliced thin
  • your favorite taco fixin's like shredded lettuce, sour cream, avocado, guacamole
How to create - 
  1. In a large skillet brown ground beef. Drain off the grease. Mix in the taco seasoning and water, cook 5 - 6 minutes over medium heat stirring often. Season with salt and pepper to taste.
  2. You can make this in a round casserole or deep dish pie pan (9-inch) or in an 8 x 8 square pan. Grease the pan well and preheat oven to 375 degrees F.
  3. Layer 2 tortillas over the bottom, for a square pan cut the tortillas to fit.
  4. You can make 2 or 3 layers.
  5. For 2 layers spread half the meat over the tortillas, dollop half the salsa over top then half the olives then sprinkle with 1/3 of the cheese. Repeat. Sprinkle the remaining cheese over top and then cover with the sliced tomatoes.
  6. For 3 layers spread 1/3 of the meat over the tortillas, dollop 1/3 of the salsa then 1/3 of the olives followed by 1/4 of the cheese. Repeat twice. Sprinkle the remaining cheese over top then cover with the sliced tomatoes.
  7. Bake about 25 minutes. Let set 5 minutes before serving with taco fixin's.

Salmon Tacos

What you will need - 

Recipe from Willow Bird Baking
Cilantro-Lime Slaw Ingredients:
  • 3/4 cup mayonnaise
  • fresh lime juice from half a lime
  • 1/2 teaspoon rice vinegar
  • 2 teaspoons minced garlic
  • 2 teaspoons Sriracha
  • 4 teaspoons sugar
  • 3 tablespoons finely chopped fresh cilantro
  • 1/4 red onion, very finely minced
  • about 5 1/4 cups slaw mix (bagged cabbage and carrot shreds)

Sriracha Aioli Ingredients:
  • ½ cup mayonnaise
  • 2 tablespoons Sriracha
  • fresh lime juice from half a lime
  • 1/2 teaspoon cumin
  • 1 teaspoon sugar 
  • pinch salt

Taco Ingredients:
  • 1 teaspoon cumin
  • 1 teaspoon chili powder
  • 1 teaspoon brown sugar
  • 1 teaspoon salt
  • 1 pound salmon
  • 2 tablespoons olive oil
  • 8-9 tortillas corn or flour 
  • chopped cilantro
  • sliced jalapeños, for topping
How to create - 
  1. Make the Cilantro-Lime Slaw: (Note: It's best if you can prepare the slaw and Sriracha Aioli a few hours to a full day in advance.) In a medium bowl, whisk together mayonnaise, lime juice, rice vinegar, garlic, Sriracha, and Swerve sweetener until the sweetener is dissolved. In a large bowl, toss the cilantro, red onion, and slaw mix together to mix. Add the mayonnaise mixture about a cup at a time, tossing as you go, until all your vegetables are coated to your preference. Cover tightly and chill until ready to serve tacos.
  2. Make the Sriracha Aioli: Whisk together the Sriracha aioli ingredients and cover tightly. Chill until ready to serve tacos.
  3. Make the salmon: Whisk together the cumin, chili powder, brown sugar, and salt. Rub the spice mix on the salmon (on both sides if it's skinless, but on just the exposed side if it's skin-on.) Heat the olive oil in a medium skillet over medium heat until shimmering. Place the fish in skin side down and cook without disturbing for 4-5 minutes before turning over and cooking for 4 minutes on the other side (thicker cuts might need 6-7 minutes per side). Remove the fish from the heat, tent it with foil, and allow it to rest for 10 minutes. The fish will flake apart easily when done.
  4. Assemble the tacos: Fill each tortilla with slaw, a few hunks of salmon, a small handful of fresh cilantro, a few slices of jalapeño, and a drizzle of Sriracha aioli.
