Avocado, Tomato and Mango Salsa

Looking for an easy way to spice up your salsa or dish? Try this salsa that is sure to blow your socks off! You can make this at home or if you are planning on visiting Cancun, let us make a run to the store and deliver the groceries to you while you enjoy your vacation! Ingredients ~
  • 1 mango – peeled, seeded and diced
  • 1 avocado – peeled, pitted, and diced
  • 4 medium tomatoes, diced
  • 1 jalapeno pepper, seeded and minced
  • 1/2 cup chopped fresh cilantro
  • 3 cloves garlic, minced
  • 1 teaspoon salt
  • 2 tablespoons fresh lime juice
  • 1/4 cup chopped red onion
  • 3 tablespoons olive oil
Directions ~
In a medium bowl, combine the mango, avocado, tomatoes, jalapeno, cilantro, and garlic.
Stir in the salt, lime juice, red onion, and olive oil.
To blend the flavors, refrigerate for about 30 minutes before serving.

What you will need -

  • 8 cups tomatoes, peeled, chopped and drained
  • 2 1/2 cups onions, chopped
  • 1 1/2 cups green peppers
  • 1 cup jalapeno pepper, chopped
  • 6 garlic cloves, minced
  • 2 teaspoons cumin
  • 2 teaspoons pepper
  • 1/8 cup canning salt
  • 1/3 cup sugar
  • 1/3 cup vinegar
  • 1/3 cup Cilantro if you prefer
  • 1 (15 ounce) can tomato sauce
  • 1 (12 ounce) can tomato paste

How to make - 

  1. Mix all together and bring to a slow boil for 10 minutes.
  2. Seal in jars and cook in hot water bath for 10 minutes.
  3. This is a medium salsa. This is also a chunky salsa so if you want a smoother salsa cut your veggies into smaller pieces.
  4. Add 2 tbsp. Freshly squeezed lime juice, salt and pepper to taste.
  5. Mix everything together and let sit overnight for flavors to meld.


Makes 3-6 quarts or pints.

Mexican Style Brats

I don't mean bad little Mexican kids! I'm talking delicioso Mexican style Bratwurst / Polish sausages. You can find all these ingredients here, minus the Cajun spice. Things you will need ~ 

  • 1/2 of package, then cut in half - Polish Sausage with Jalenpeño
  •  1/3 Yellow Pepper
  •  1/3 Red Pepper
  •  1 Jalepeño
  • 1/3 Red Onion
  • Olive Oil - few teaspoons
  • Submarine Style Bread/Buns
  • Garlic Powder
  • Weber's Cajun Spice
(The spice is key to almost all my recipes!)

Makes 2 Brats, use the other half of the package to make 4. and double the veggie part of the recipe.

While you are cutting the sausage and veggies place a few teaspoons of olive oil in the pan to heat. Once everything is cut, throw in the pan with everything sprinkled /covered in the Cajun spice and cook until veggies are soft and sausage is browned. You can cook on a BBQ for that delicious BBQ flavor! Another way to cook this on the BBQ is to make aluminum foil pockets, add sausage, peppers, onions and a little of your favorite beer! YUM
To toast the bead place a few teaspoons on olive oil in a separate pan to heat at the same time as the veggies and sausage are cooking. Cut the bread in half, sprinkle with garlic powder and place in pan to toast.



Place veggies and sausage on the toasted bread and add spicy mustard if desired. ENJOY!!

Taco Casserole


In case this is the first time you are visiting our blog you should know we aren't here to necessarily give you cooking advice, but to share with you what we do, kinda sneaky right? Sorry. We are an extension of Cancun Best Discounts called We DeliverBasically how it works is that you can go online, make an order from our online grocery store and the products will be delivered to your hotel or wherever you are staying for the week. Since there isn't much to talk about on the blog about delivering food, we thought we would share some of our favorite Mexican inspired recipes. These can be made at home or with the products you can buy online and have us deliver to you here in Cancun, so you can enjoy some great Mexican dishes in Mexico! WE hope you try some of them and enjoy. Be sure to leave feedback in the comments section, we would love to hear what you think!

What you will need ~ 
Recipe borrowed from Let's Share Recipes

  • 1 7oz. bag of your favorite tortilla chips or Doritos, crushed
  • 1 lb. hamburger, browned
  • 1 pkg. taco seasoning, mixed according to directions
  • 1 (8 oz.) pkg. shredded Cheddar cheese
  • 1 (8 oz.) pkg. shredded Mozzarella cheese
  • Shredded Lettuce
  • Sliced tomato
  • red onion
  • Top with sour cream

How to create this ~ 

Layer ingredients in 9 x 13 pan as listed - crushed chips, meat and seasonings, 2/3 of cheese, lettuce, tomato, and remaining cheese. Bake at 350 degrees for 15 minutes.
 Too easy right?

Corn Cake Caribe


Looking for something a little different to make? These healthy and tasty corn cakes are great for a filling breakfast, snack or side dish. Served with some salsa and sour cream, you have a fiesta! 
ü  1/4 cup chopped onion

ü  1/4 cup chopped green pepper
ü  1 teaspoon canola oil
ü  1/4 cup all-purpose flour
ü  2 tablespoons yellow cornmeal
ü  1/2 teaspoon sugar
ü  1/4 teaspoon salt
ü  1/4 teaspoon dried oregano
ü  1/8 teaspoon baking powder
ü  1/8 teaspoon ground cumin
ü  1 egg, lightly beaten
ü  1/4 cup 2% milk
ü  1 cup frozen corn, thawed
ü  1 tablespoon diced pimientos
ü  1/2 cup salsa

 How to make ~ 
In a skillet saute onion and green pepper in oil until tender then put aside. In a large bowl whisk the flour, cornmeal, sugar, salt, oregano, baking powder, cumin, egg and milk just until combined. Fold in the corn, pimientos and onion mixture.
Heat a large skillet coated with cooking spray. Drop batter by 1/4 cupfuls into skillet. Cook for  on each side or until golden brown. Serve with salsa.
