The Perfect Guacamole

Nothing says Mexican food like a bowl of delicious guacamole! It can be served simply with tortilla chips or tostadas (flat, crispy tortillas), on top of a burger or add it to any taco and you have a Mexican fiesta (party). The preparation is minimal and fairly inexpensive, but can amp up just about any gathering. In case this is the first time you are visiting our blog you should know we aren't here to necessarily give you cooking advice but to share with you what we do, kinda sneaky right?  We are an extension of Cancun Best Discounts called We DeliverBasically how it works is that you can go online, make an order from our online grocery store and the products will be delivered to your hotel or other rental for the week. Since there isn't much to talk about on the blog about delivering food, we thought we would share some of our favorite Mexican inspired recipes. These can be made at home or with the products you can buy online and have us deliver to you here in Cancun, so you can enjoy some great Mexican dishes in Mexico! The Perfect Guacamole

What you will need ~
  • 3-4 ripe and soft avocados
  • 1 roma tomato
  • red onion
  • cilantro
  • 2-3 small limes
  • 1 jalapeño (if you would like it with a little kick)
  • Cajun seasoning (the secret weapon)

How to make ~

First begin by thoroughly cleaning all vegetables. If you have purchased veggies here in Mexico we always recommend using Microdyn to disinfect your fruits and veggies to insure safe consumption.

Chop the tomato, onion, cilantro and jalapeños. Half the limes and avocados. Scoop out the inside on the avocados into a medium sized bowl. To keep the guacamole greener longer put at least one of the avocado seeds into the mix. Juice 2 of the limes into the bowl, this will not only give flavor to your guacamole but help to keep it from going brown as fast. Keep one of limes apart to add last if you desire more lime flavor. Add in all your chopped goodies as well as some Cajun seasoning and stir. It's best to let set in the refrigerator for a little while to bring out all of the delicious flavors. 

Optional ingredients ~ 
  • Garlic
  • Black Beans
  • Mayonnaise to make it more creamy
  • Substitute serrano chilies for the jalapeño to make it less spicy.
  • Bacon crumbles
  • Chipotle peppers as a sub for Cajun seasoning.
  • Sour cream
  • Salt & pepper

Homemade Flour Tortillas

Have you ever wanted to make homemade flour tortillas? It only takes a few cheap ingredients and is super easy so why not? What you will need ~

  • 4 cups of flour
  • 1 1/2 teaspoons of salt
  • 1 teaspoon of baking powder
  • 4 tablespoons of lard
How to make ~

Put flour, salt, and baking powder into a medium bowl and mix well. Work the lard into the mixture with your fingers until it looks like coarse meal. Add 1 1/3 cups of warm water and stir until a soft dough forms. On a work surface, knead 15-20 times and then cover and let rest for about 15-20 minutes. Divide the dough into 16 balls for 6 inch tortillas and 8 inch balls for 12 inch tortillas. Roll out each tortillas to desired size. Heat a large cast iron skillet over medium heat until hot. Cook the tortillas one at a time until blistered and charred in spots, about 1½ minutes per side. Wrap in a dish towel to keep warm.

Coconut Stuffed Limes

This recipe is from the small south-western state of Mexico called Colima where candies made from coconut are famous. The candied limes maintain a slight bitterness which pairs very nicely with the sweet coconut. You might be wondering why we are sharing recipes on our online grocery store blog... What you will need to make these tasty natural candies ~

  • 2 teaspoons of baking soda
  • 12 medium - large sized limes washed thoroughly
  • 2 1/2 cups of sugar
  • 2 cups of fresh shredded coconut
  • 172 cup water
How to prepare ~

Bring 2 quarts of water to a boil, add 1 teaspoon of baking soda and stir then add the limes. Cook at a soft simmer until tender for about 10-15 minutes or until slightly tender. Remove the limes and let cool. Make a small incision on the top of each lime with a sharp knife, remove the inside while making sure not to tear the skin of the lime. Once all the limes have been cleaned out, discard the inner part and return the limes to the pot covering them with cold water and the remaining 1 teaspoon of baking soda. Bring to a boil, strain, and repeat process without adding more baking soda to remove all the bitterness from the limes. 
Return the limes to the pot for the last time covering them with just enough cold water then stir in 1 1/2 cups of sugar. Cook over medium-low heat  stirring occasionally until the sugar has made a syrup the same consistency as maple syrup, about 15-20 minutes. Remove from heat letting it cool in the pot then remove and let dry on a wire rack if possible. 
Combine the coconut, 1 cup of sugar and 1/2 cup of water and cook over medium heat. Stir occasionally and cook until the coconut is thick, almost translucent. Let cool until safe to handle.
Fill the limes with the coconut and let cool completely. You can then eat or store in an air tight container with wax paper for up to 2 months.

Ceviche Recipe


Ceviche is a very common dish here in Cancun and sooo delicious! My first trip to Cancun we went deep sea fishing and little did I know we were catching our lunch. As the boat captain dropped us off on Isla Mujeres to spend some time one of the crew members was making our lunch from the fish we had just caught. Because this recipe doesn't require any cooking, its very simple to make and doesn't take a lot of time. You might be wondering why we are sharing recipes on our blog... What you will need ~                                                     

  • 1 lb of Tilapia or white fish 
  • 1 lb of shrimp
  • Fresh lime juice (about 1 cup)
  • 2 Roma tomatoes
  • 1/2 cup chopped red onion
  • 1/4 cup of cilantro
  • 1 of your favorite chilies, jalapeño or serano chopped
  • 1 avocado
  • salt & pepper
How to prepare ~    
         
Cut fish into small pieces then add fish, shrimp, and lime juice to a bowl to marinate in the refrigerator covered for a few hours or until fish is white throughout. When the fish and shrimp are ready drain the juices from the bowl. Add the tomato that has been chopped and seeded along with the red onion, cilantro and chili. Sprinkle salt and pepper on top. Slice the avocado and place on top of the ceviche.
*Serve with tortilla chips, tostadas or make your own by heating a dry pan and placing the tortillas in the pan until desired crunchiness. Garnish with your favorite hot sauce.
